Yummy Sweet Corn Casserole

Have you ever eaten yummy sweet corn casserole before? 

Yummy sweet corn casserole is one of my favorite holiday casseroles. But honestly, you could totally eat this casserole just about any time of the year as long as you have some corn on hand. 

Because it’s just that good. It’s sweet. It’s moist. And it’s just plain delicious. If you eat this, you don’t need dessert. I’m telling you! 

Hence, if you’ve never eaten this yummy sweet corn casserole before, you’re in for a real treat. Your whole family will love it. The kids will devour it and ask for more. 

So, are you ready to make this yummy sweet corn casserole? I’ll bet you can’t wait. Here’s what you need to get started.

So, Here’s What You Need

  • 1 3/4 cup of drained whole corn (Or Buy A Can)
  • 1 3/4 cup of cream corn (I MAKE MY OWN – SEE BELOW) (Or Buy A Can)
  • A stick of melted butter
  • 1 box cornbread mix (I use Jiffy)
  • A Farm Fresh Egg (Or Buy A Dozen)
  • 1 Cup Sour Cream (I use Daisy)
  • Baking Dish (I use a glass one) or Muffin Tin

First of all I make my own cream corn. Here’s how. 

And How to Make Homemade Cream Corn

So, why do I make my own cream corn? Because why would I need to buy it if I have corn in the freezer? It’s super easy, I’m telling you. Here’s the ingredients you need. Careful…Don’t blink.

  • 1 3/4 sweet corn
  • Tablespoon of Water
  • Teaspoon of Corn Starch
  • Pinch of Salt

That’s literally it. So, put all the ingredients into a blender. I have a Magic Bullet that works great for this. 

Then, mix it up until creamed. When everything is combined, you’re ready to start mixing up your casserole. 

Now, Make Yummy Sweet Corn Casserole

Next, combine all ingredients into a large bowl and mix well. Preheat oven to 350 degrees F. Grease your baking dish and pour mixture into the baking dish. You can also use a muffin tin to make muffins.

Then, smooth mixture with a spatula. 

Finally, the casserole is ready to go into the oven. Set your timer for 60 minutes for a casserole dish and 15 minutes for muffins. 

After the time is up, use oven mitts to carefully remove the casserole from the oven. Check the casserole with a toothpick by poking it through the middle of the casserole. 

If the toothpick comes out clean, your casserole is done! If it needs more time, just stick it back in for a couple minutes longer. And now you’re ready to enjoy this yummy sweet corn casserole as a side or meal.

Most Noteworthy Farm Fresh Ingredients

I used a couple of farm fresh ingredients to make my yummy sweet corn casserole. These are ingredients my family and I grew on our farmstead for our own recipes and meals. 

  • Eggs – I used one egg in this recipe. 
  • Sweet Corn – The star of the dish is absolutely the sweet corn. 

Other ingredients that could be farm fresh:

  • Sour Cream – If you have a dairy farm, you could be making your own sour cream. 
  • Butter – Same story with butter. If you have a dairy farm, try making your own. 
  • Corn Bread Mix – Using ground corn meal, you could make your own corn bread mix. 

So, growing these ingredients yourself takes a lot of time and work. One of the reasons I don’t have dairy animals on my farm is because I love to travel off the farm from time to time. And dairy animals must be milked every day no matter what is going on. 

But with some of these other ingredients (like sweet corn and chickens), I can plan a trip in advance. A neighbor can come over and retrieve eggs, check on the chickens, etc. 

And sweet corn is just pretty dang easy to grow. Here’s how we grew our own sweet corn for the yummy sweet corn casserole. 

Also: Growing & Preserving Sweet Corn

Sweet corn is a row crop. So, this means it’s planted in rows parallel to one another. We had the land available for growing a sweet corn plot. It had good soil and a great location. We just needed the sweet corn seed. 

I obtained the seed for the sweet corn by agreeing to complete a yield trial with our state land grant university. This means, I agreed to their terms and to use the seed they have provided me for the trial. Not only that – I was also free to use the sweet corn however I wanted as long as I return well documented data about the varieties back to the university. 

So, here’s what we did:

Managing this sweet corn trial was a family job. Because it was a big job to care for so many plants. My husband Matt planted the seeds using a 6-row planter. So, there were 6 rows of a certain variety, 6 rows of another variety and so on for a total of 36 rows. WOW!

Then, data was recorded regarding Disease Resistance, Plant Vigor, Uniformity of Corn Ears, and other interesting traits. I recorded data three different periods during the growing season. 

And boy, did these plants produce well. We had 36 good rows of sweet corn with perfect growing weather. Plenty of rain and hot weather during tasseling time. Therefore, the plants were able to put on 1-2 ears each. 

Then, we watched the corn ears from the milk, dough and dent stages until they were ready to be harvested at the end of July. There’s a fairly short window for harvesting corn. So, as soon as the corn was picked, it needed to be either eaten or frozen. I froze a lot of sweet corn but I also gave a lot away to friends and family. We even exhibited some in the county fair vegetable show

Of course, we enjoyed it, too. And I froze a lot to enjoy later.

Other Ways to Enjoy Sweet Corn

In addition to yummy sweet corn casserole, there are many other ways to enjoy fresh or frozen sweet corn. Here are some more ways you might enjoy your farm fresh or frozen sweet corn:

There’s a lot of misconception about corn being bad for you. It’s all about your opinion, but here’s mine. And it’s based on nutrition facts

You see, sweet corn has a lot of good nutritional value. So, here’s a breakdown of the different good nutrients you can get by consuming sweet corn in moderation:

  • Calories – 132 calories in one cup of sweet corn.
  • Protein – 5 Grams
  • Carbs – 29 Grams (Hey – You need some carbs in your diet. And it’s all about moderation)
  • Vitamin A – 6%
  • Vitamin C – 17%
  • Thiamin – 21%
  • Folate – 18%
  • Magnesium – 14%
  • Potassium – 12%

And there’s much more. Hence, there really is a lot of nutrition in sweet corn. Maybe it’s been given a bad wrap in some arenas. Consequently, you don’t want to eat a LOT of sweet corn. But, it’s a good vegetable to enjoy in moderation. 

Most of all, since we live in the Corn Belt of the US, we will continue to grow and eat sweet corn in recipes such as yummy sweet corn casserole.

Finally, Enjoy Yummy Sweet Corn Casserole

Not only is yummy sweet corn casserole delicious. But it is also very easy to make. You just need a few things. My prep time was about 20 minutes. 

So, in 20 minutes I made the cream corn, added ingredients to the bowl, mixed and prepared for baking. Easy peasy. 

And if you don’t have your own fresh sweet corn on hand, you can definitely use canned corn. There’s absolutely nothing wrong with using store ingredients. All food has been grown by farmers. Selling to stores are ways that farmers can sell their products for people to buy.

Furthermore, selling to stores is just another way farmers help to feed the world and make a little bit of income for their families.

I've made this recipe before and it is delicious. Thanks for reminding me about it. But wait...you said you had a sweet corn trial and you did not name the winner. Or did I miss that? I've run a sweet corn trial at my garden, too. They are so fun. Also tomato trials.

Call me crazy but I have never been a fan of sweet corn especially in my rice like my mom likes to make it, but I'm definitely looking to try it out this way!
